Iberian Pork ham, also known as “Pata Negra” meaning “Black Leg”, from Spain, is a cured and dried for several years to bring up its unique flavour. Iberic Pigs, specific to the Spanish peninsula, are small black pigs that are traditionally raised in semi-liberty. There are 2 primary ways of feeding the pigs, that are usually appended to the name of the ham: “cebo” (feed mix with acorn) and “Bellota” (100% acorn fed).
